Terroir and wine making

The Nero d'Avola and Frappato grapes used to produce Contessa Costanza wine are cultivated in the vineyards owned by Poggio di Bortolone, in the municipality of Chiaramonte Gulfi, on a sandy soil facing south. Once carefully selected, the grapes ferment on their skins and are then subjected to malolatic fermentation, followed by a 24-month aging in stainless steel barrels.
