Terroir and wine making

The Kaid Sauvignon of Alessandro di Camporeale is obtained with grapes from the vineyard planted in 2004 in the highest hilly area of the company, 450 meters above sea level, in a clay and sandy soil. Here the mild but not arid climate with significant temperature differences between day and night promotes optimal ripening of the grapes. The method of espalier cultivation raised in Guyot is accompanied by manual techniques of green pruning, topping, defoliation and thinning of the bunches. The winery follows the principles of organic farming and uses natural measures to obtain a final quality product.

Taste notes

The Kaid Sauvignon reveals its dense and vibrant texture that releases a never tiring enveloping energy. On the palate reveals its authoritativeness and sapidity, with a persistent finish enriched with almond notes.

Wine at the table

The Kaid Sauvignon of Alessandro di Camporeale combines perfectly the first fish dishes and, in general, the delicate dishes of Mediterranean cuisine.

Curiosity

For the production of his wines, including Kaid Sauvignon, Alessandro di Camporeale uses small but important natural measures on the vines: from roses that are used as sentries for oidium attacks, green manure, a technique for planting herbaceous crops that promotes soil fertilization.
