Terroir and wine making Chiaramonte Firriato is a Nero d'Avola IGT produced with the grapes of the autochthonous Sicilian vine par excellence. The particular characteristics of the soil that distinguishes the estate of Dàgala Borromeo, in which the espaliere vines grow, give the wine a modern structure and a complex olfactory profile. The fermentation at a controlled temperature of 26-28 ºF follows the traditional method in stainless steel tanks and lasts about 10 days. The wine is then aged for 6 months in American oak barrels and 3 months in bottles. Taste notes Nero d'Avola Chiaramonte has an intense ruby red color enriched with vivid purple nuances. The fragrance is fragrant and brings out notes of plum, blackberry, black cherry, blueberry, cloves, black pepper, licorice, dark chocolate and humus. The palate is full of power, balanced by a surprising softness. A deep and decisive wine. Wine at the table The Chiaramonte Firriato at the table is the ideal companion of tasty first courses, meat and mature cheeses. It also goes well with tasty vegetable risotto. Curiosity The Firriato winery is constantly dedicated to research aimed at revealing the great biodiversity of native Sicilian vines, such as Nero d'Avola, which in Chiaramonte is one of the most successful manifestations of this productive philosophy
