Terroir and wine making
On the red limestone lands of Vittoria, at 250 meters above sea level, grow the grapes of Merlot and Cabernet Sauvignon with which the Maldafrica Cos is produced, the result of one of the most renowned areas of Sicily for its appreciated wine production. The vines are reared with espalier system and Guyot and harvested strictly by hand in September. The fermentation is spontaneous and takes place on the skins in terracotta amphorae where indigenous yeasts are present. This is followed by a period of aging in Slavonian barrels and bottles. All processes follow the principles of biodynamic and organic agriculture.
Taste notes
The Maldafrica is appreciated at first sight with its intense ruby red color. It seduces, then, the nose with delicate notes of berries. Finally, it conquers the palate with its softness and elegant structure.
Wine at the table
Maldafrica Cos is a full-meal wine, which prefers the company of meat dishes and medium-aged cheeses.
Curiosity
The name of the winery Cos comes from the acronym of the last names of its founders: Giambattista Cilia, Cirino Strano and Giusto Occhipinti.
