Terroir and wine-making

The terroir of Borgo Guarini, Paceco in the province of Trapani, contributes to give the sparkling wine Charme Bianco its unmistakable freshness and liveliness, due to the orographic nature of the territory and its exposure to north-east on a height of 250 meters above sea level. The vines are grown on a medium-sized soil tending to sandy, with a system of backboards with Guyot pruning. The grapes are harvested by hand in the first ten days of September and ferment for 15 days at a temperature of 16-18°C. Winemaking involves soft pressing of the berries and controlled fermentation to achieve the appropriate pressure. Finally, the ageing takes place 'with the background' and lasts for 3 months.

Notes of taste

With its elegant light straw yellow color enriched with green tones, the White Charm of Firriato emanates from the glass delicate notes of field flowers and broom that immediately enrich with hints of mango, papaya, banana and melon on which, Finally, rosemary and laurel take over. The palate is harmonious and lively, with a balanced acidity vein with soft structure. Among all the Sicilian wines, it is certainly one of the most representative labels.

Wine at the table

Suitable for cheerful and carefree convivial situations, the Charme Bianco is suitable, with its dynamism, to enhance in particular fish dishes such as carpacci, salads and fried foods. It also lends itself well to combinations with Japanese cuisine.
