Terroir and winemaking
Cerasuolo di Vittoria Classico is a DOCG wine produced in Acate, a little district in Siracusa province, that has an important naturalistic heritage. Here, in the Bidini Soprano upland, the medium textured soil is characterized by light and dark red sands: on the light one Frappato grapes grows and in the dark sands Nero d'Avola grapes. Cerasuolo di Vittoria arises from the union of this two typical Sicilian grapes. Winemaking and bottling processes take place on the production territory, as well as the aging of minimum 18 months.
Tasting notes
Cerasuolo di Vittoria Classico is a soft, balanced and enveloping wine. To the sight, it has an intense and brillant cherry red colour. To the nose it releases a delicate scent of soft fruits and cherries, spice hints and vanilla nuances, liquorice and cocoa. To the palate gives a persistent soft and spiced sensation with a pleasantly fresh end.
Pairings
Cerasuolo di Vittoria Classico pairs well with aged Ragusano cheese, rich dishes with spices, lamb, chicken curry, second courses of white meat like rabbit meat and game paté. Serve this wine at a temperature between 16° and 18° C.
Curiosity
Cerasuolo di Vittoria is one of the firts Sicilian wines to have obteined DOC recognition, in the 1973, and the first to have the DOCG, in the 2005. In the 1606, when Vittoria town was founded, this wine already existed in the current character.
