Terroir and wine-making

The grapes of Cabernet Sauvignon, essence of this Sicilian red Firriato, grow in the Borgo Guarini estate, in the Agro di Trapani, where the winemakers have found the perfect habitat to give the fruits the authentic qualities of Sicilian nature. The vines are planted on a calcareous clay soil and raised with a system of spalling with pruning cord. The hand-picked harvest in the second decade of September is immediately followed by a fermentation of selected grapes lasting 10-12 days. The traditional red wine-making process in stainless steel tanks with temperature control is completed by a 7 months ageing in French and American oak barrels. The wine refines for another 3 months in bottle to further fix its appreciated organoleptic notes. The wine Firriato Altavilla della Corte Cabernet Sauvignon is Terre Siciliane IGT that perfectly combines the personality of the French grape with the qualities of the Sicilian terroir.

Notes of taste

With a deep and intense ruby red color, sometimes violet, the Cabernet Sauvignon Altavilla della Corte has a bouquet of aromas typical of the French grape variety that are characterized by seductive Mediterranean hints of cherries, Blueberries, blackberries and rhubarb to which are added the hottest ones of dark chocolate, tobacco and juniper berries. On the palate it confirms its sensuality, with fresh and velvety tannins and balanced acidity.

Wine at the table

Cabernet Sauvignon Firriato is a great choice to accompany first courses of meat and second courses of lamb or beef. It should be served at a temperature of 16-18 °C in a large glass, suitable for wines with good structure such as the Altavilla della Corte.
