Terroir and wine-making
Planeta could not but choose the territory of Noto as an optimal place for the cultivation of Nero d'Avola grapes, aimed at producing a great wine in purity. Noto is the place of origin of the autochthonous vine; the ancient vines grow on the white ground at 40 meters above sea level. The vines are raised with a rammed cord system and harvested in September. The destemming of the harvested grapes is followed by 21 days of permanence on the skins. After stripping, malolactic fermentation in steel is carried out. Finally, the wine ages for 14 months in barrique and reaches an alcoholic strength of 14% vol.
Notes of taste
The purple red color of Nero d'Avola Santa Cecilia Planeta anticipates to the sight the compactness of aromas and balanced flavors in a riot of pleasant sensations. Aromas of spices and fruits such as carob, bergamot and orange peel. On the palate it is fresh and compact in thick tannins, sweet and vigorous with deep notes of graphite, wild blackberry and cherry.
Wine at the table
A wine so vigorous needs important combinations such as spicy pork dishes or fibrous fish.
