Terroir and winemaking
The Cellaro Night Moon is born in the picturesque hilly scenery of Sambuca di Sicilia, in the Agrigento, where the Grillo vine finds an ideal habitat. Here, thanks to the strong temperature variations between day and night, the grapes ripen slowly, preserving intense aromas and a marked freshness. The harvest takes place at a very special time: under the moonlight, a practice that enhances the organoleptic characteristics of the wine and preserves its fragrance. The sparkling wine is made using the Charmat method, a technique that involves fermentation in an autoclave to maintain intact the liveliness and elegance of the bubbles, giving a fine and persistent perlage.
Notes of taste
From the glass a clear and elegant scent is released, with notes of fresh fruit, citrus and white flowers, enriched by a slight hint of yeast and sweet almond. The color is a bright straw yellow, made even more fascinating by the fine and continuous perlage. On the palate, this sparkling wine stands out for its dry, full and fragrant taste, well balanced between freshness and roundness. The natural aroma of Grillo is combined with a pleasant savoury, creating a harmonious and enveloping drink.
Wine at the table
Versatile and dynamic, the Luna di Notte is perfect as an aperitif, accompanied by fish croutons or seafood appetizers. Thanks to its freshness, it goes beautifully with fish first courses, delicate risottos and light main courses such as carpaccio or salads. To try also in mixology, with Aperol or Campari Bitter, served with ice and an orange slice for an even more refreshing experience. Ideal to taste at 6-8°C, it is the perfect sparkling wine for social toasts and special occasions.
