Terroir and wine-making
The Primitivo grapes from which the Primitivo Salento IGT is obtained are located in the heart of the Salice Salentino, among secular olive trees that grow together with vines bred with a spined cord system. From the plant to the cellar, the wine-making process is conducted following organic production practices that give the wine an added value and contribute to giving it its valuable organoleptic qualities.
Notes of taste
Dressed in intense purple red, the Primitivo Salento Castello Monaci is appreciated for its enveloping aromas of black cherry and ripe marasca and for the lively notes of black pepper and vanilla. On the palate reveals its pleasant fullness and a soft tannin. A wine of good structure and body.
