Terroir and winemaking
3 Carati wine is produced with Nero d'Avola grapes of Terre Siciliane IGT. This grape grows in one of the most suitable viticulture area of the ibleo upland, to an altitude of 220 meters, in Bastonaca and Mortilla area, in Ragusa province. Here there is a sandy clay loam and the training system used for Nero d'Avola grape is espalier. After an accurate selection of the bunches, there are winemaking and fermentation phases; after, the wine is ready for ripening in stainless and barriques. The refinement is in horizontally bottles for 6 months with a controlled temperature.
3 Carati Avide is a Sicilian wine of rare elegance and a persuasive tannic sensation, with a good harmony of flavours. To the sight it has a ruby red colour with strong purplish-blue reflections. To the nose it realeses a scent of attractive marasca cherry, raspberries, black currant and huckleberries. To the palete this wine is soft and flavourful, elegant and strong, with an accentuated savour and an intense final freshness of mint balsamic notes.
Nero d'Avola 3 Carati softness pairs well with sweet and sour rabbit with peppers, red meat, aged Ragusano cheese and stuffed pork rib-eye-steak. Serve it at a temperature between 18° and 20° C.
