Terroir and wine-making

The grapes of the four autochthonous vines Catarratto, Inzolia, Zibibbo and Carricante grow in the most suitable terroir of Sicily: the first three on the clay soil of Pianoro Cuddìa, in the estate located in the west of the island, the last on the volcanic terrain of Etna at 700 meters above sea level. The harvest takes place between the first and second decade of September: each bunch is hand-picked and transported to the cellar for vinification. The soft pressing of the grapes and fermentation at controlled temperature precede the aging of 6 months in stainless steel tanks with daily stirring. This process enhances the individual qualities of each grape: the complex and fruity aromas of Catarratto, the aromatic qualities of Zibibbo, the harmony and elegance of Inzolia and the minerality of Carricante.

Notes of taste

The result of this refined blend is a Terre Siciliane IGT wine that offers a successful synthesis of aromas in perfect balance. The Quater Vitis White Firriato has a bright straw yellow color rich in greenish reflections; the seductive and complex scent is concretized in hints of medlar, orange, pineapple, mango, flowers of zagara, elderberry and lime that alternate in an intriguing game with nuances of thyme, ginger, lavender and flint. Finally, it satisfies the palate with softness and vibrant acidity confirming its aromatic qualities.

Wine at the table

The Firriato winery recommends pairing the white Qater Vitis with sea-smelling pastries. In general, wine is great to taste with spicy fish dishes.
